I can not say enough good things about our favourite taco joint, Panchos Takos, which is just off Olas Altas on Basillo Badillo. It has become our tradition that when we arrive in Puerto Vallarta, we change into shorts and head down for some simple pork tacos.
Panchos is only open at night and is open quite late so if you have an early night or want a quick bite between stops, this is the place to go. You can order anything here from tacos to quesadillas, but I have to say our favourite is the taco. They are small and come with 3 different sauces: a cilantro sauce, 2 hot sauces and some limes.
The night before cooking it, the pork is thinly sliced and marinated. Then it is stacked into a big loaf size to be put on a BBQ skewer which rotates and cooks over an open pit. The pork gets chipped off right onto the open faced tortilla. At the top and bottom of the pork is a pineapple which gets chipped off and tops the pork. It’s simple, inexpensive and super delicious. Add a bottle of agua mineral or cerveza and you have yourself a perfect little meal.
